Now recipes - I am 99% sure you own Veganomicon, but if you dont I am happy to scan and send you PDFs of these two:

Chickpea-Quinoa PIlaf on p. 115-116 (gluten-free with no modifications)
Pineapple-Quinoa-Cashew Stir-fry on p. 176 (gluten-free as long as you substitute tamari for soy. I also skip the pineapple juice part and just use water)

Curried Adzukis with Mango and Spinach
